Black Angus is a British breed, the main "supplier" of marbled beef. The Aberdeen Angus breed originates from hornless Scottish cattle grazed for many hundreds of years on rich flood meadows near the major ports of Aberdeen and Angus.
Angus beef refers to the meat that comes from the Aberdeen Angus cattle breed, which is more muscular than other breeds . Angus beef cuts usually have more marbling, which makes the steak more juicy and tender.
The neck is the part of the entrecote adjacent to the neck. Neck meat contains a high percentage of connective tissue and therefore requires a long heat treatment in a humid environment to obtain the necessary softness.
Neck meat has good flavour and is inexpensive. Beef collar is traditionally baked with various spices and soaked in a marinade.
