Black Angus is a British breed, the main "supplier" of marbled beef. The Aberdeen Angus breed originates from hornless Scottish cattle grazed for many hundreds of years on rich flood meadows near the major ports of Aberdeen and Angus.
Angus beef refers to the meat that comes from the Aberdeen Angus cattle breed, which is more muscular than other breeds . Angus beef cuts usually have more marbling, which makes the steak more juicy and tender.
Striploin is a "premium" steak that is cut from a lean cut consisting of a single muscle. A thin strip of fat runs around the perimeter of the steak, giving the meat its juiciness. Many chefs trim this off after the steak has been cooked and the steak is lean.
